On the road Chicken Salad GF, DF, Egg Free,Refined Sugar Free
Since living on the road I am always looking for new and nutritious meals that can be cooked ahead of time and don’t have to be reheated when I want to eat it. I was looking at different chicken salads at the store and they looked good however, when I looked at the nutritional facts I saw a huge listen of extra ingredients. And some things food that I know do not align with my gut so I decided to create my own recipe and I love it!
Ingredients:
1 Chicken Breast, Shredded. I get organic
1/2 Cup of Red Onion, Chopped
1/2 Cup of Celery, Chopped
1 oz Box of Raisins, I got organic and read the ingredients to make sure there is no added sugar
1 Tablespoon of Lemon Juice
1 Tablespoon of Mustard. I used a horseradish Dijon Mustard. Again make sure you are reading the ingredients
1/4 Cup of Mayo I use a brand called “just mayo” Making sure there were no eggs added
1 Teaspoon of Minced Garlic I use Trader Joe’s brand and it is delicious
Instructions:
Mixed it all together and enjoy! This can be split into two smaller servings or one big serving if you want!
